Kookoo is essentially a Persian omlette, as such there are numerous types. Kookoo Sabzi is probably the most common and popular followed by the Kookoo Bademjoon.
Its fun to make KooKoos as one can play and innovate very easily.
Here I have featured a Kookoo Bademjoon à la Provencale. I tinkered with the original recipe by adding bell peppers and a touch of Herbe de Provence.
