Khoresht e Bademjan
Persian Aubergine Stew
Khoresht e Bademjan is a rich and flavorful recipe and one of the favorites among many Iranians; comprised mainly of aubergines, tomatoes and lamb. Any dish with the combination of eggplants and tomatoes is just amazing (that is not only in Persian cuisine). This Khoresht is very popular and for many Iranians its a comfort food.
It is a dish for as all seasons and very tasty and like most Persian Khotresht’s its packed with proteins and is pretty lean. It is served with steaming white Chelo Saffron Basmati rice prepared the Persian way.
I also add some sundried tomatoes giving additional texture and reenforcing the taste of tomatoes.
