Fava Bean Rice
This is a well-blended, aromatic steamed saffron rice with delicious fresh dill and fava beans served with chicken or Mahicheh it is a nice colorful dish to serve your guests or take on outdoor picnics. Mast o Khiar or Mast o Laboo with be perfect with this dish.
It’s also one of the tradional dishes for Sizdah Bedar, which marks the last day of the Nowruz (Iranian new year) festivities. On this day, Iranians celebrate the 13th day of Nowruz by picnics and heading out to parks and open fields to play games and listen to music, alongside friends and family. This is the day that we dispose of our Sabzeh (wheat sprouts) by throwing it in running water, which is the symbol of evicting evil for the upcoming year.
- Rice (prefereablly Basmati)
- Baqali (Fava beans)
- Butter or oil
Personally I prefer to make my Baqali Polo with fresh Fava beans. When not in season dried or frozen can be used.
